Smokey Baked Chicken Wings

Some people are spouting on and on about "New Year, New You!"

I'm eating chicken wings.


And French fries. French fries that I deep fried myself. (But we'll talk about those another day)


Sure, I could spend January lecturing you all about "eating healthy!" and "turning a new leaf!" and "detoxifying your body!" But that's not my thing. We make candy here in the Wilde Kitchen. No date on the calendar is going to change my cooking habits!


To be serious though, these chicken wings are actually not terrible for you. They are baked in the oven and flavored with a spice rub and minimal oil and... THEY TASTE AMAZING! You seriously need to make these wings tonight. You need a bunch of different spices for this recipe, so you may need to hit up the grocery store for this one.


Go to the grocery store. Make these chicken wings.  Do it do it do it!!!

Smokey Baked Chicken Wings
Adapted From Bobby Flay's Grill It!


2 pounds chicken wings

For Spice Rub

2 tablespoons ancho chili powder
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon smoked paprika
2 tablespoons olive oil

For Sauce

1/3 cup honey
1 chipotle chile pepper, chopped (from can of chipotle peppers in adobo sauce)
2 tablespoons adobo sauce (from the above can)
1 tablespoon ancho chili powder
1/2 teaspoon kosher salt
2 tablespoons olive oil

Toasted sesame seeds
Green onions, thinly sliced

Preheat oven to 400°F. Cover a baking sheet with aluminum foil. Place a cooling rack on top of the baking sheet. Lightly spray cooling rack with non-stick spray.

Rinse chicken wings under cold water. Separate wings at the joints into three pieces (See this exciting youtube video for more info!), toss the tiny wing tip. Pat the chicken wings dry with a paper towel and place wings in a large bowl.

Combine spices for the rub and shake over the chicken wings. Add olive oil and toss the wings to coat evenly in spice mixture. Place chicken wings on the prepared baking sheet. Bake chicken wings for 35 minutes.

While chicken wings are baking, whisk together all the ingredients for the sauce in a large bowl. Pour some of the sauce into a small bowl and set near the oven with a pastry brush.

After 35 minutes, remove chicken wings from the oven. Flip wings over and brush with some of the sauce from the small bowl. Return to the oven and bake for another 10-15 minutes, or until sauce is caramelized. Remove from the oven and toss wings into the large bowl with the remaining sauce. Toss to coat.

Pour chicken wings onto a serving platter. Sprinkle with sesame seeds and green onions.
